"I am currently in the kitchen, working on the new Kai Menu. I'll be back soon!"

Since returning from our summer break full of R&D, I've been hard at work perfecting new menu items. It has been a thrilling few weeks with nothing but amazing, indigenous ingredients at the forefront of my mind. We're looking to dive deeper into the community's charismatic landscape and continue to translate that into our restaurant evolution. In the meantime, I hope to see you on Sunday, November 5th at azcentral.com's Food & Wine experience.

Check out the event online and snag your ticket if you haven't already.

Super Tuscans

While not an official classification in Italy, the term "Super Tuscan" has gained quite a reputation from its loyal followers. In the 1970s, some producers in Tuscany found the laws of production in Chianti to be too restrictive and chose to go down a different route by blending Bordeaux varietals into their Sangiovese based wines. Today, some producers do not include Sangiovese in the blend and base the blend solely on Bordeaux varietals. Some of the more highly sought bottlings of Super Tuscans include Tignanello, Sassacaia, Guado al Tasso, Ornellaia, and Masseto.

A personal note, from Kevin Lewis

As Wine Director and Sommelier of Kai, I have had the honor of working, partnering and representing some of the best wines in the world. With the devastating recent fires in Napa and Sonoma, the faces and families behind the wineries and the citizens of these counties are in need of our help. This message is one simply to bring awareness to the very real tragedy and the people so greatly affected. Listed below are several websites that allow for donations, should you feel moved to give. #uniquelykai stands with you, Wine Country.
